Raw Blueberry Pie

My kids love this pie...Sam, my four year old gobbles it up. I made it today in less than 10 minutes, stuck it in the freezer for about an hour, ready to eat, that was at 11am, it's 5pm and the pie is gone!! Healthy, great for healing diabetes, balancing blood sugar and getting lots of antioxidants and vitamin c, plus a little protein in the crust!

This is one of the easiest raw pies to make.

1/2 to one whole cup of raw cashews ( I use nut free crust recipes too, you can always grind dates and dried coconut to form a crust)
2T coconut oil
1-2T raw agave nectar

Grind cashews unsoaked in food processor until a powder-like substance is made. Add coconut oil and agave. Process together till combined, and press into pie pan, place in freezer for 5-10min.

2 bags of raw organic blueberries (frozen). Fresh works if available 4C total, but when using frozen, I rinse them in cold water and let them sit for a minute draining them and letting them defrost a bit.
1 banana
1-2T raw agave
Optional: cinnamon, nutmeg, coconut oil, pro-biotics, a handful of strawberries

Mix in food processor till smoothe, pour over pie crust. Place in freezer for an hour till firm, serve or let defrost a few minutes and then serve.

Or, place in the refrigerator for about 3 hours to set. The banana helps it firm up. If you use too much of other fruits, it may not firm up as well, but feel free to experiment.

Raw desserts are so nutritious, they're perfectly acceptable to eat for any meal of the day, or to eat a lot of. For my boys who are quite finicky about whole raw foods, sometimes these blended pies are the best way to get them to eat it, and clearly, Sam gets whatever his body needs in terms of protein, fats, and nutrients from this pie. Now if I can only get him to eat some fresh leafy greens....that's a whole other issue. :-)
